The biggest hurdle I’ve faced in my pursuit of a healthier lifestyle is my snack food cravings. I think that’s true for a lot of people so I wanted to share my latest better for you snacking find. I’ve been keeping a few boxes on hand to satisfy me when cravings kick in. They’re almost the same crispy, crunchy texture as a kettle cooked chip, thick and crispy. They’re also incredibly tasty, especially with a creamy dip like my Chipotle Queso Dip. I keep mine simple:
1 cup of light sour cream + 1/2 cup shredded mild cheddar + seasoning (1/2 tsp. cumin, 2 tbsps. chipotle powder, 1/2 tsp. cracked black pepper, 1 tsp. garlic powder, 1/4 tsp. onion powder).
The most time-consuming part is melting the cheese, which takes less than 2 minutes in the microwave! From there you just mix it all together and enjoy, or you can refrigerate it for a nice refreshing dip on a hot day. You can also add in fresh veggies for a super savory dip, I’ve just found this chunk-free version to be more kid and picky eater friendly.

Chipotle Queso Dip

- 1 cup of light sour cream
- 1/2 cup shredded mild cheddar cheese
- 1/2 tsp. cumin powder
- 2 tbsps. chipotle powder
- 1 tsp. cracked black pepper
- 1 tsp. sea salt
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- Step 1
- Put cheese in a microwave-safe bowl. Heat in microwave on 30-second intervals, stirring after each interval.
- Step 2
- Combine remaining ingredients in a medium-sized dish.
- Step 3
- Mix in melted cheese.
- Step 4
- Serve warm or refrigerate for 2 hours.
